  • Instead of using shredded Parmesan, choose to use freshly grated Parmesan cheese. This way, it incorporates better into the cream mixture. Use a Microplane to grate the cheese or a box grater.
  • Be careful with the temperature while cooking. Remember to stir frequently, so the garlic and butter-flour mixture doesn’t burn.
  • Enjoyed immediately because the sauce will thicken quickly. You can thin out the sauce with little white wine, milk, reserved pasta water, or half and half.

Ingredients

  • 2 Tbsp. butter
  • Four garlic cloves, grated with a Microplane
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. Fresh lemon juice
  • 1/3 cup grated Parmesan cheese
  • 1 Tbsp. Finely chopped parsley
  • Kosher salt and fresh black pepper
  • 2 cups half and half (not fat-free)
  • Zest 1 lemon, or about 1 tsp.

If you want to add milk, you can use 2% or whole milk. However, be aware that the higher the fat content, the more decadent the sauce will be.

Directions

Melt butter in a 12-inch or 30 cm non-stick skillet over medium heat. Stir in garlic and cook it for around 30 seconds. Remember to stir constantly.

Afterward, stir in flour and cook for about 1 minute. Wait until it’s lightly golden. It should look like a paste. Be careful not to burn the flour.

Gradually pour in the half and half, stirring as you pour. Then, season everything with salt and pepper. Now it’s time to bring it to a simmer. Also, reduce heat to a medium-low and cook until the sauce thickens. If any lumps form, whisk them out. The properly thickened sauce should coat the back of your spoon.

    In a saucepan add the grated carrot, oats, milk, nut butter, cinnamon and raisins and cook for 8-10 minutes until creamy (add more milk if necessary), stirring regularly. Spoon into a bowl and serve.

2. Carrot Cake Energy Balls

  • 1 cup (100 g) rolled oats (use gluten-free certified if needed)
  • 2 cups (450 g) tightly packed, soft pitted dates
  • 3/4 cup (75 g, approx. 1 medium carrot) lightly packed, finely grated carrot
  • 1 cup (70 g) unsweetened shredded coconut
  • 1 tsp cinnamon
  • 1/4 tsp sea salt

Directions:
Blend Oats: Add the oats to a food processor and blend briefly to break them down into a grainy consistency.
Make the Dough: Add the rest of the ingredients and mix until it forms a thick, sticky dough. If it’s not sticking together, add 1 tbsp of warm water and process again.
Roll: Use your hands to roll the mixture into approximately 20 energy balls. You can use a small cookie scoop to help get them evenly sized. They should be about 1 heaping tablespoon each.
Serve: You can roll your balls in extra shredded coconut, coconut sugar or drizzle with melted coconut butter to make a “glaze” and enjoy. Store the balls in a sealed container in the fridge for up to 5 days or in the freezer for up to 3 months.

  • 2 cups plain flour (all purpose flour) (level cups, unsifted, not packed), + keep 1/4 cup extra for dusting & adjusting dough
  • 1/2 tsp salt
  • 3 1/2 tbsp / 50g unsalted butter (1.75 oz)
  • 3/4 cup milk

Instructions

  • Melt butter in milk: Combine butter and milk and heat until butter is just melted – on stove or in microwave.
  • Combine Dry: Combine 2 cups flour, salt, butter and milk in a bowl.
  • Knead 2 minutes: Sprinkle work surface with flour then knead for a few minutes until it is smooth – it doesn’t need much kneading. Add extra flour if the dough is too sticky.
  • Rest 30 minutes: Wrap with cling wrap and rest at room temperature for 30 minutes or so.
  • Roll into rounds: Dust bench top with flour, cut dough into 6 pieces, roll into balls, then roll out into 20cm / 8″ rounds, 2 – 3 mm thick.
  • Heat oil: Heat a non stick pan over high heat (no oil). (Note 1)
  • Cook: Place one flatbread in the pan, cook for around 1- 1 1/2 minutes – it should puff up dramatically. Once the underside has nice golden patches on it, flip and cook the other side for 45 seconds to 1 minute until the underside has golden spots and it puffs up again.
  • Keep wrapped in a towel: Stack the cooked bread and keep wrapped with a tea towel – the moisture helps soften the surface, making them even more pliable. Then, continue to cook with remaining pieces.
  • Brush with butter or oil (optional): Brush or spray bread with olive oil or melted butter. Or you can try with melted butter mixed with minced garlic for a garlic butter version!

Homemade Cinnamon Roll Cake – A Recipe You Will Love

Dough Ingredients:

1 egg
100 g white sugar
1 teaspoon vanilla essence
200 g white flour
2 teaspoons baking powder
1/2 teaspoon salt
170 ml of milk
50 g melted butter

Ingredients for cinnamon topping:

70g soft butter
100g brown sugar
1 tablespoon cinnamon

Ingredients for cream cheese:

200g cream cheese
60-100g confectionary’s sugar
1-2 tablespoons of milk

Directions:

1. Preheat the oven to 180 ° C.

2. Dough instructions: Beat the egg, sugar, vanilla essence and milk with a mixer.

3. Add flour, salt and baking powder and mix until everything is well incorporated. 4. At the end add the melted butter and incorporate everything well.

5. Pour the dough into a tray.

6. For the composition of cinnamon: mix soft butter, sugar and cinnamon.

7. Pour the cinnamon composition on top of the dough, turning it lightly with a stick / knife tip to spread the composition.

8. Leave the cake in the oven for 20-25 minutes at 180 ° C (or until a toothpick inserted in the center of the cake comes out clean) during which time the cream cheese is prepared.

9. For cream cheese: Mix cream cheese with confectionary’s sugar until fluffy. Add a little milk until you reach the desired consistency.

After the homemade cinnamon roll cake has cooled a bit, cover it with cream cheese and enjoy!

Fish’n Chips

Ingredients:

900 gr cod fish
150 gr cassava flour
50 gr almond flour
7 gr inactive yeast
spices (salt and paprika)
3 eggs
salt and pepper
olive oil

Directions:

1. Preheat the oven to 200 ° C and grease the tray with olive oil.
2. Cut the fish into the desired shape, and remove the excess of liquid with a paper towel, then season it with your favorite mix (I used salt and pepper).
3. Prepare a bowl where you put the flour mixture, inactive yeast and spices and in a second bowl beat the eggs with the spices. Pass through flour mixture, egg, flour mix, place in baking tray and spray with olive oil.
4. Place in the oven for 30 minutes and serve wonderfully with baked potato wedges, salad and guacamole.

Cold Pasta Salad with Tahini Sauce

Ingredients:

Spiral pasta made from organic wholemeal rice
Lots of parsley
Tomatoes
Cucumbers
Bell peppers
Avocado
Diced and cooked chicken breast as desired
Kalamata olives
Boiled eggs

For the sauce prepared in the blender you need:
2 tablespoons full of tahini
Juice of half a lemon
spices: a pinch of salt, Italian spice mix, 1 tablespoon olive oil, 1 clove crushed garlic, and water to reach the desired consistency (I used 10 tablespoons of water)

Directions:

We mix the ingredients and enjoy the obtained sauce in a cold pasta salad.

Baked Cauliflower

A cauliflower
Favorite spice mix (eg salt, pepper, paprika, turmeric, granulated garlic, cayenne pepper, cumin, etc …)
Olive oil

Directions:

1. Preheat the oven to 180 ° C and prepare a tray lined with baking paper
2. Wash the cauliflower, cut into the desired shape and place in the prepared tray
3. Combine the oil with your favorite spice mix until a paste is obtained
4. Pour the paste obtained over the cauliflower, massaging it so that it reaches evenly everywhere
5. Place the pan in the oven for 30-40 minutes

The Well Known Pasteis De Nata or Portuguese Custard Tart Recipe

If you’ve ever been to Portugal, you know that one of the greatest pastries is the Portuguese custard tart or the orginial Pasteis de Nata. Its crisp, flaky crust holding a creamy custard center is just a delicious sweet treat for the pastry lovers!

Calling for just a few ingredients, this recipe is all about technique. The puff pastry should be made the night before, so it has time to chill fully before you press it into the molds. If you don’t want to buy molds, you can make these tarts in a muffin tin. The muffin tin tarts won’t get exposed to heat as evenly as tarts made in the traditional molds, so they will be a little lighter in color. Luckily, both are still crisp and delicious.

Ingredients:

For the Puff Pastry:
1½ sticks (192 gr) unsalted butter, softened
1¾ cups (224 gr) all-purpose flour, plus more for dusting
⅔ cup (156ml) water
¼ teaspoon kosher salt

For the Filling and Garnish:
1 cup (128 gr) granulated sugar
⅔ cup (156 ml) water
1 cinnamon stick
1 cup (236 gr), plus 6 tablespoons, whole milk, divided
½ cup (64 gr) all-purpose flour
6 egg yolks
Ground cinnamon, for garnish

Directions:

The puff pastry: In a small bowl, whisk the butter until it is the consistency of sour cream. In the bowl of a stand mixer fitted with the dough hook, combine the flour, water and salt. Mix on low speed,  scraping the bowl down occasionally, until the mixture comes together and has a tacky consistency.

Transfer to a well-floured work surface and form into a 1-inch (2.6 cm) rectangle. Using a floured rolling pin, roll the dough into a ½-inch-thick  (1.27 cm) rectangle, 10 (25 cm) inches long. Cover with plastic wrap and let it rest for 15 minutes.

Remove the plastic wrap and roll the dough into a 15-inch (38 cm) square, dusting with more flour as needed. Spread a third of the butter on the bottom half of the dough, leaving a 1-inch (2.6 cm) rim. Using a bench scraper, fold the top half of the dough over the butter. Press the edges to seal and pat the dough with the rolling pin. Roll the dough into another 15-inch square. Spread half of the remaining butter on the bottom half of the dough, leaving a 1-inch rim. Using the bench scraper, fold the top half of the dough over the butter. Press the edges to seal. Pat the dough with the rolling pin and rotate the dough so that the seam is facing you. Now, roll into an 18-inch (45 cm) square.

Spread the remaining butter all over the dough, leaving a 1-inch rim. Starting with the edge closest to you, roll the dough into a tight log. Wrap in plastic wrap and refrigerate until very firm, at least 2 hours, preferably overnight.

Make the filling for the Portuguese Custard Tart: Preheat the oven to 260 degrees celsius. In a medium saucepan, combine the sugar, water and cinnamon stick over high heat. Bring to a boil and cook for 1 minute, then remove from the heat and let sit until ready to use.

On a lightly floured surface, trim the ends of the dough to make sure they’re even, then cut the log into thirty ½-inch slices. Place each slice into the cavity of an egg tart mold or muffin tin, with the cut side of the spiral facing up. Use your thumb to press the center of the spiral into the bottom of the pan and continue pressing to evenly flatten the dough against the bottom and sides of the cavity, extending about 1⁄16 inch above the rim of the tart molds or ¾ inch up the sides of the muffin tin. Repeat with the remaining dough. Refrigerate until firm, 10 minutes.

Meanwhile, in a small saucepan, heat 1 cup (236 ml), plus 1 tablespoon, of the milk over medium heat until bubbles begin to form around the edges, 4 to 5 minutes. In a large bowl, whisk the flour with the remaining 5 tablespoons of milk. Continue whisking while adding the hot milk in a slow, steady stream. Discard the cinnamon stick from the sugar syrup and whisk the syrup into the milk mixture in a steady stream. Return to the saucepan and cook over low heat, whisking constantly, until thickened 10 to 12 minutes.

Add the yolks to the mixture and whisk until well combined, then strain through a fine-mesh sieve. Pour 1½ tablespoons of the warm filling into each pastry shells.

Bake until the shells are golden brown and crisp, the custards are set, and the tops are blackened in spots, 15 to 20 minutes. Let cool in the pans on wire racks for 5 minutes. Then, remove the molds, transfer the tarts to the wire racks and sprinkle with cinnamon. Serve warm.

Ingredients:

Flesh of 2 ripe avocados (240g)
1/4 cup (32 gr) regular cocoa powder
1/4 cup (32 gr) dutch cocoa OR melted chocolate chips
3-4 tbsp milk of choice
1/2 tsp pure vanilla extract
1/8 tsp salt
sweetener of choice to taste: 1/4 cup (60 ml) pure maple syrup

Directions:

Putting all the ingredients in the blender is the most important part of the recipe. The version with the chocolate chips will be richer; the version with the dutch cocoa (important to use dutch) will be lower in fat and sugar.

Combine all ingredients in a blender or food processor until completely smooth. You can use 3 tbsp of almond milk, but if you’re not using a liquid sweetener then you might want to add a little extra for a smoother consistency. Annnnd, guess what? Your delicious and healthy avocado chocolate mousse recipe is just ready to be served! So quick and so simple, no?

Delicious Homemade Raffaello Truffles – No Bake Recipe

This homemade Raffaello recipe is a quick dessert for hot summer days when you don’t want to turn on the oven. You will love this recipe, because these Raffaello truffles are extremely tasty, easy and quick to be made. It takes only 5 minutes to be done. Sound incredible, no?

Ingredients:

For about 10-14 Raffaello truffles you will need:
100 ml of water
50g sugar
50g butter
200g milk powder
50g coconut flakes
1 drop vanilla / coconut / almond / lemon essence (according to preference)

Directions:

Put the water, sugar and the essence in a small saucepan over medium heat. Stir them for 2-3 minutes until the sugar has melted.

After that add the butter and mix again until the butter has melted.

Pour the powdered milk and mix well with a whisk until the composition becomes homogeneous (if the composition is too wet, add a little more powdered milk, and if the composition is too dry you can add a little more water).

The next step is to transfer the composition to a bowl and leave for about 30 minutes in the refrigerator to cool (try to resist the temptation!)

Now you’ve arrived to the final step and the most expected! Form Raffaello balls, one by one, and roll them through coconut flakes.

It was super easy, right? This recipe could become your favourite dessert, especially for summer time when the weather outside it’s very hot. If you are a coconut lover, and at the same time want to obtain a very delicious dessert in a short time, it is a sweet solution!
