Whole Roasted Chicken with Lemon – perfect for family reunions

We have to admit that we all want to find ways of spending more time with our family, while enjoying some delicious food! This recipe is the best way to bring this balance between cooking and enjoying the time spent with our families. The best part is that everybody could join the preparation, because it is so easy to be made! You and your loved ones are going to love it and it will certainly become your favourite recipe for the family reunions!

Ingredients

Main dish:
1 whole chicken
8 medium potatoes
4 cloves of garlic
2 medium lemons
dry or raw parsley – preferably raw
spicy and sweet berry, salt and freshly ground pepper
3 tablespoons of olive oil and a few pieces of butter

Salad:
1 carrot
some green salad leaves
1 radish
juice from a quarter of a lemon

Dressing:
7-8 tablespoons of low / fat yogurt – depends on what you have in the house
1 tsp of olive oil
1/2 teaspoon of dried dill – you can choose fresh dill and if you have because it is more aromatic
1 tbsp lemon juice and a little shredded lemon peel
a pinch of salt and fresh ground pepper
1 clove of garlic

Directions

First step:

Peel and rinse the potatoes, and after that, you have to cut them into small pieces and boil them for five minutes together with the two lemons. Be careful and use only lemons which have not been chemically treated. Otherwise, you must wash them thoroughly with an abrasive sponge (without detergent!) or completely remove the lemon peel.

Meanwhile, heat the oven to 220 degrees and use the ventilation function. This option circulates hot air from the top outer and the lower elements and distributes it around the oven cavity.

Second step:

Put the chicken in the tray where you have already put the baking paper.
Flavour the chicken with the following mixture: in a bowl put the olive oil, butter, salt, pepper and the rest of the spices for the main dish and the four cloves of minced garlic. Stir well and grease the whole chicken, including the lower part that is placed on the tray. If you want extra flavour you can put this mixture of spices under the skin.

Third step:

So far, the 5 minutes in which the potatoes and lemons have boiled would be over. After you have strained the potatoes well, you will perforate the lemons with a knife in many places (so they will release their juice and flavour) and put them inside the chicken. Mix the potatoes with a little salt, pepper, parsley and olive oil and place them around the chicken. After that, pour a cup of hot water in the tray.

Final step:

Now it’s the time to place the pan in the preheated oven at 220 degrees on the lowest shelf. Check the whole chicken after a hour and add just a little bit of water, then leave it in the oven for another 10 minutes.

For the salad and potatoes use the prepared dressing!
