Four breakfast recipes ideas that will make you a morning person

Most of us are not that morning persons, and this is the reason why we often skip the most important meal of the day, the breakfast. In order to stay healthy and at the same time to save time, we came-up with some solutions. These breakfast recipes are just delicious and perfect for the ones who are not morning persons.

1. Mushroom omelet

Ingredients
3 eggs
30 g butter, for frying
30 g shredded cheese
¼ yellow onion, chopped
4 large mushrooms, sliced
salt and pepper

Directions
Crack the eggs into a mixing bowl with a pinch of salt and pepper. Whisk the eggs with a fork until smooth and frothy.
Melt the butter in a frying pan, over medium heat. Add the mushrooms and onion to the pan, stirring until tender, and then pour in the egg mixture, surrounding the veggies
When the omelet begins to cook and get firm, but still has a little raw egg on top, sprinkle cheese over the egg.
Using a spatula, carefully ease around the edges of the omelet, and then fold it over in half. When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelet on to a plate.

2. Banana pancakes

Ingredients
1 ripe banana
2 eggs
2 tablespoons flour
1/2 lb. baking powder – optional
vanilla extract – optional

Directions
In a large bowl mix all the ingredients with a fork and during this time place a non-stick pan on the coking stove. After that, put two tablespoons of dough and fry until bubbles appear on the surface of the pancake. Turn and leave for ~ 1 min.
Serve with your favorite toppings and fruits.

3. Chia Pudding

Ingredients
3 tablespoons chia seeds
1 tablespoon maple syrup (or sweetener of choice)
1 teaspoon vanilla
3/4 cup milk of choice

Directions
Mix all the ingredients together in a small bowl and then, leave it on the counter at room temperature to thicken. This process takes about 15 minutes.
Once the composition gets thick, stir together once again and add a splash of extra milk if needed.
Choose your favourite toppings and flavours (for instance, fruit jam, chocolate cream, honey, etc) and enjoy!

4. Avocado Toast

Ingredients
1 slice of bread (I like thick-sliced whole-grain bread best)
½ ripe avocado
Pinch of salt
Optional: Any of the extra toppings 

Directions
Toast your slices of bread until they become golden and firm. After that, remove the pit from your avocado. Choose a big spoon and then scoop out the flesh. Put it in a bowl and mash it up with a fork until it’s as smooth as you like it. Mix in a pinch of salt (about ⅛ teaspoon) and add more to taste, if desired.
Spread avocado on top of your toast.
