Spring Pasta Plate

The story of this spring pasta plate started from pizza sauce upgraded into a pasta recipe!
While preparing this plate, a word came to my mind, and that was, spring! Therefore, this was reason why I called this plate, spring pasta! Above all, the main inspiration for its name was the explosion of colours and the taste which was truly amazing! Not to mention the fact that the time of preparation is so short!
In conclusion, it could be a perfect choice for those who don’t want to spend so much time in the kitchen, but at the same time want to enjoy something just delicious!

Ingredients

For this spring pasta plate you will need the following ingredients:
1 can with tomatoes
1-2 garlic gloves
2 fresh basil leaves
1 tbs of olive oil
1/2 chilli flakes
1/2 tbsp of salt
1 tbsp oregano
a medium onion
1 tbsp olive oil
Some mushrooms
6-7 olives
Arugula
Grated parmesan – I used a vegetables peeler
Freshly ground pepper
60 gr of pasta / portion

Directions

In a heated pan put the olive oil and the chopped onion. Let them cook for 2-3 minutes and after that add the sliced mushrooms and wait another 4-5 minutes, stirring continuously.
When the onion and the mushrooms are cooked add the tomato sauce and some olives.
Now it time to grind some fresh pepper.
Let the sauce boil for the next 5 minutes.
Meanwhile, bring a large pan of salted water to the boil and cook the pasta following the pack instructions. When they are cooked, drain them and toss with the sauce.
When the pasta are finished, just add some arugula and parmesan!

Even this recipe is very simple, the taste of the spring pasta plate is so intense and tasty, because of the nice combination between the tomato sauce, sweet onion, basil and the bitter arugula!
