Loaded Potatoes&Chicken Recipe

This loaded potato recipe with chicken is a simple and quick one. Everything is prepared in the same tray and the baking time is 45 minutes. The result is a wow: chunks of chicken breast and potatoes wrapped in creamy sauce with a discreet garlic flavor.

Imagine potato skins with melted cheddar cheese, crushed bacon pieces, chives and spiced chicken all combined in one dish!

Ingredients:


4 whole Strips Bacon
3 whole Medium Potatoes, Cubed
2 whole Boneless Chicken Breasts, Cubed
1 Tablespoon Olive Oil
1 whole Small Onion, Diced
1 cup Diced Red And/or Green Bell Peppers
4 ounces, weight Monterey Jack Cheese
Seasoned Salt And Pepper, to taste

Preparation

Cook bacon and set aside. Bring a pot of water to boil, add potatoes and boil for 5-8 minutes or until potatoes are softened.

In a large skillet, cook chicken; drain any leftover fat or oils. Return skillet to the stove and heat olive oil in it over medium-high heat. Add onions and bell peppers, cook for 3 minutes. Add potatoes to the skillet and cook for another 3-5 minutes or until potatoes are slightly browned. Add chicken to the skillet, top with cheese and bacon, cover and cook until cheese is melted.

It doesn’t get simpler than this: You simply chop up the ingredients, add some basic spices, dump it in a skillet or oven-safe dish and bake.
