Fresh cake with fruits for summer season

If you are among the people who prefer simple and quick recipes, then this fresh cake with fruits has to be written down! It is the right choice for summer season, because it has a fruity and fresh flavour. Moreover, the preparation steps are so simple and it could be done in a very short time. Yes… you heard right! Simple, quick and just delicious! Just think about the tender dough with lemon and mascarpone cream with blueberries. Prepare it for special occasions or as your everyday dose of sweets, because it fits perfectly for both options.



1 yogurt (150 g)
3 eggs
2 teaspoons of baking powder
1 pinch of salt
1 glass (of yogurt) oil
2 glasses of sugar
3 glasses of flour
lemon extract
lemon peel


300 g frozen blueberries (if you use fresh, add a cup of water)
2 tablespoons of sugar (I put coconut, because I like the flavor)
1 tablespoon grated starch
3 cans of mascarpone (750 g)
1 can of whipped cream (200 g)
2 tablespoons of confectioner’s sugar


Spread the dough in the oven tray and bake it at 190⁰C for 15-20 minutes. After the dough cools down, cut it in 4 circles, using a plate.

The cream is more than simple: add the frozen blueberries (if you use fresh, add a cup of water), the sugar and 1 tablespoon grated starch in a pan and put it on the small fire, until it thickens. After that, allow it to cool down.

Mix (with the mixer) the mascarpone with the whipped cream and the confectioner’s sugar. Mascarpone and the whipped cream should be cold. Divide the cream into 4 bowls and leave one with white cream. In the next bowl add 1 teaspoon of blueberry jam, then in the next bowl add 1 tablespoon of blueberry jam. Finally, for the last bowl add 2 tablespoons of jam. The colour will be different for each bowl.

How to assemble: a little cream on the plate you use + dough + light cream + dough + darker cream + dough + the darker cream. Keep the white cream to cover the cake with it. It will get color from the other creams.

What you need to know is that the cream will crack after a while, because the dough absorbs the water and swells, but you can adjust it at the time of serving with a spatula.

The combination of blueberries and lemons seems like a dream and it’s perfect for summer season!
